This plastic cheese matting can be sterilised using a weak solution of hypochlorite. Use for soft cheese on a draining rack with open-ended moulds, or underneath the mould in a press. If making soft cheese we recommend covering the matt with a milk filter paper, before filling the mould with fresh curd to avoid sticking.
